Patelin is French for village or community and the Patelin wines from Tablas Creek use fruit from neighboring vineyards as well as their own. The Tablas Creek Vineyard Patelin de Tablas is a blend of four red Rhône varietals: Syrah, Grenache, Mourvèdre and Counoise. The wine incorporates fruit from several of the top Rhône vineyards in Paso Robles, each vineyard selected for its quality. Like many red wines from the Rhône Valley, it is based on the dark fruit, mineral and spice of Syrah, with the brightness and fresh acidity of Grenache, the structure and meatiness of Mourvèdre and a small addition of Counoise for complexity. The 2017 Patelin de Tablas has a dark, Syrah-driven nose that is creamy, meaty, minerally, and a little bit wild. A little blue fruit lurks underneath and comes out with air. The mouth shows both Grenache and Syrah's influence, with black plum, boysenberry, chalky minerality and nice powdered sugar tannins that come out on the finish. Taittinger Brut La Française is a blend of Chardonnay, Pinot Noir and Pinot Meunier wines from at least 35 villages. The high proportion of Chardonnay (40%) is unique among fine nonvintage Champagnes. The presses are located in the vineyard for immediate pressing of the fruit after the manual harvest, and the resulting must is cold fermented under temperature-controlled conditions. After resting until the end of winter, the wine is blended, and then the final cuvée undergoes a second fermentation in the bottle in Taittinger’s cool cellars. The aging of Brut La Française on the lees for almost 4 years more than doubles the legal minimum of 15 months. This extra time in the cellars allows the wine to reach the peak of aromatic maturity, and the result is a delicately balanced Champagne, known for its consistently excellent quality. This wine has a subtle, pale gold color with fine, persistent bubbles. It is delicate, with aromas of peach, white flowers, vanilla pod, and brioche on the nose and flavors of fresh fruit and honey on the palate. 91 Points Wine Spectator.

With panoramic views of the Salinas Valley and beyond, Sleepy Hollow is perched on an ex pansive benchland 13 miles from Monterey Bay. The well-drained vineyard features sparse soils comprised of sand, gravel, and granite. These soils reduce yields and create rich, concentrated flavors in the grapes. The vineyard receives morning sunlight from its east-northeast exposure, and lives much of the time in the cool fog and w ind from the Pacific Ocean. With a long, cool growing season, the grapes develop the character, intensity and depth of flavor for which the vineyard has become famous.
The Talbott Logan Chardonnay 2016 is representative of the world-class Chardonnay consistently produced from the celebrated Sleepy Hollow Vineyard. This wine offers ar omas of jasmine, sandalwood and vanilla along with richer notes of brioche and butterscotch. Born in Lyon France and gaining his education from the University of Bordeaux, Benoit worked at numerous French wineries before getting a job (with the help of his friend and mentor Michel Rolland) in Napa Valley with Andy Erickson.
