Blair Chardonnay 2018, Delfina’s Vineyard
Blair barrel ferments and ages their Blair Chardonnay 2018, Delfina’s Vineyard in 3 different barrels. 25% is in stainless steel barrels to keep the fruit character and acidity alive, 25% in new French Oak barrels, complete malolactic conversion, to soften the wine and give it just a touch of creaminess and mouth feel. The final 50% is fermented in old used neutral oak barrels that evaporate off water and alcohol leaving behind enhanced Chardonnay flavor. Baked apples and pears meet with hazelnut and butterscotch on the rich nose of this bottling, which is lightly cut by a squeeze of lemon. It’s viscous on the palate, with baked marshmallow and strong roasted nut flavors.
