The 2012 Cabernet, Frediani Vineyards is full of toasted spices, sun-warmed earth and wild dark fruits. A wonderful expression of black currants in a lush package of balanced acidity and fine textured tannins. There is definitely that touch of oak with little licorice and a bit of bittersweet chocolate.

2014 was a superb vintage. The vines reacted beautifully to the weather which allowed for full development and maturity.
Explosive aromas of black cherry pie with hints of sweet chocolate. The underlining dry herbs and vanilla on the nose, lead into an enticing full, lush palate of mature plum, black cherry, and dark chocolate. Integrated throughout the wine is mouth-watering cranberry, and dense oak. This wine is delicious on release with round fine-grained tannins; the perfect aging qualities. Caymus Cabernet Sauvignon 2016 has aromas and flavors which can only be achieved through “hang time” – a technique which chances the loss of crop if early winter sets in. Leaving the fruit to “hang” on the vine unusually long develops suppleness, increases color, and matures the tannins of the grapes.
The wine is abundant in textural tannins yet soft as velvet. Deep purple-black in color, the 2015 Cabernet Sauvignon springs from the glass with lifted crème de cassis, violets and chocolate box notes plus hints of lilacs, raspberry leaves, anise and cardamom. The perfumed black fruit preserves and chocolate-laced notes completely pack the full-bodied palate, with soft, velvety tannins and just enough freshness, finishing very long and very spicy.
