Shafer’s single-vineyard Carneros-grown Chardonnay is produced from small-clustered clones of
grapes selected for their low yields and distinctive flavors. Fermentation takes place within individual oak and stainless steel barrels using native yeasts. The wine matures on the lees for 14 months
and since it undergoes no malolactic fermentation this Chardonnay retains a lively natural acidity.
The vineyard is named for its Red-shouldered Hawks and other birds of prey, who play an
important role in Shafer’s sustainable farming practices.
This 25th vintage of Shafer Red Should Ranch Chardonnay 2018 offers abundant, exotic aromas and flavors of citrus
blossom, apricot, pineapple, grapefruit zest, and honeydew melon all held together with seamless
structure, elegant balance, and energy that comes from pure, clean acidity.

    Steele’s flagship white wine, California Cuvee Chardonnay, really shows off Jed Steele’s wizardry in blending. As with all great wines, the process begins with the selection of the right vineyards. They have worked with most of the great Chardonnay vineyards in California and have chosen six prestigious properties to obtain the grapes for this wine. 
    With the exception of the Lolonis vineyard fruit (which was stainless steel fermented and then barrel aged for 4 months). The Steele Chardonnay Cuvee 2016 is fermented in barrel (20% new) and aged sur-lees for about eight months. Stirring the barrels regularly aids in the completion of malolactic fermentation, yielding complexity, depth of flavor and aroma. The Santa Maria vineyards add a tropical fruit character to the wine, flavors and aroma of mango, pineapple, and papaya. The Sonoma vineyards attribute citrus character and acid to the cuvée. The Mendocino vineyard, Lolonis, has a flavor profile that leans toward apples aromas of apple crisp and cinnamon. Halibut with a white wine burre blanc sauce would complement the complex flavors of the Cuvée Chardonnay nicely.

    This label illustrates the Kraken attacking Dubrovnik. Aromatically the 2019 Rabble is driven with crushed pineapple, white peach, pear, and hazelnut notes. The 2019 vintage is characterized by being a drought year, which highlights the minerality in this wine. Wines from these years typically exhibit an interesting saline component “underneath” the fruit. On the palate the 2018 Rabble Chardonnay has luscious mouthfeel with bright acidity. The flavor profile begins with citrus, pear and transitions to a tropical laden finish driven with pineapple and guava.
